For the apple pear mixture:
2d’Anjou pears
1cupdemerara sugar
2cinnamon sticks
1tablespoonwhole allspice
1teaspoonwhole cloves
2cupsorganic apple juice
Instructions
To make apple pear mixture:
Dice pears then add to pot on medium heat on stovetop with all other ingredients. Allow to simmer 25 minutes until consistency is thicker than juice. Strain through cheesecloth or fine mesh strainer and cool. Refrigerate.
Place all fresh ingredients in tin with ice and shake. Double strain over ice into rocks glass. Garnish cocktail with pear wheel and lemon twist, if desired.
