Rosemary Dream

Ingredients
- 1 1/2 ounces London Dry Gin
- 1/2 ounce red wine (cabernet or merlot preferred)
- 3/4 ounce fresh pomegranate juice
- 1/2 ounce rosemary orange simple syrup
- 3 ounces sparkling water
- Fresh rosemary sprig, optional garnish
- Pomegranate seeds, optional garnish
- Orange slice, optional garnish
For Rosemary Orange Syrup
- 3 wide strips fresh orange zest
- 3/4 cup orange juice, fresh squeezed
- 1/2 cup sugar
- 1/2 cup water
- 6 small clusters fresh rosemary leaves

- Combine in shaker the gin, red wine, pomegranate juice, and rosemary orange simple syrup. Add ice and shake until chilled. Strain into chilled Collins glass, top with sparkling water and then add ice. Garnish with sprig of rosemary, pomegranate seeds and orange slice, if desired.
Rosemary Orange Syrup
- Make simple syrup by boiling all ingredients together in a 1-quart heavy saucepan until reduced to about ¾ cup, about 15 minutes. Cool to room temperature. Syrup will keep in airtight container, refrigerated, for about to 2 weeks.
