Gem City Aioli

  • 3/4 cup olive oil (vegan) mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup fresh cilantro leaves, firmly packed
  • 1 jalapeno (seeds and membranes removed), diced
  • 1 1/2 cloves garlic, halved
  • 3/4 teaspoon ground cumin
  • 1/4 teaspoon salt, or to taste
  • Juice of 1/2 Lime


  • Blend mayonnaise, mustard, cilantro, jalapeño pepper, garlic, lime juice, cumin, and salt together in a blender or food processor until smooth.
  • Pour mixture into a bowl, cover bowl with plastic wrap, and refrigerate until flavors blend, at least 1 hour.
