Creamy Parmesan Polenta

Serves 4

1 cup polenta (cornmeal)
3 tablespoons butter
3 cloves garlic, minced
4 cups chicken broth
⅓ cup Parmesan cheese, shredded
Salt and pepper, to taste

Melt butter in medium saucepan. Add minced garlic and cook about 1 minute. Add chicken broth and bring to a boil. Once boiling, slowly add polenta, about ⅓ cup at a time. Stir to combine.

Reduce heat to medium and cook 15 to 25 minutes, stirring every few minutes until polenta has thickened to desired consistency. Stir in cheese; season with salt and pepper.
