Watermelon Salad

Ingredients
For Salad:
- 5 cups fresh watermelon, cubed
- 4 ounces crumbled goat cheese, such as Humboldt Fog by Cypress Grove
- 1½ cups mandarin oranges, segmented
- 3 tablespoons mint vinaigrette, recipe below
- 1½ cups arugula
For Mint Vinaigrette:
- 1 bunch fresh mint
- ¼ cup granulated sugar
- ¼ cup 2021 Noma Vineyards Barbera Rosé
- ½ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
For Salad:
- Mix arugula, mandarin orange segments, crumbled cheese, and cubed watermelon, then toss with mint vinaigrette and serve.
For Mint Vinaigrette:
- Make mint simple syrup by dissolving sugar in ¼ cup hot water and steeping mint leaves in it.
- Combine wine, olive oil, red wine vinegar, 2 tablespoons of mint simple syrup, lime juice, salt, and ground pepper.
