Watermelon Salad

Ingredients
  

For Salad:

  • 5 cups fresh watermelon, cubed
  • 4 ounces crumbled goat cheese, such as Humboldt Fog by Cypress Grove
  • cups mandarin oranges, segmented
  • 3 tablespoons mint vinaigrette, recipe below
  • cups arugula

For Mint Vinaigrette:

  • 1 bunch fresh mint
  • ¼ cup granulated sugar
  • ¼ cup 2021 Noma Vineyards Barbera Rosé
  • ½ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions
 

For Salad:

  • Mix arugula, mandarin orange segments, crumbled cheese, and cubed watermelon, then toss with mint vinaigrette and serve.

For Mint Vinaigrette:

  • Make mint simple syrup by dissolving sugar in ¼ cup hot water and steeping mint leaves in it.
  • Combine wine, olive oil, red wine vinegar, 2 tablespoons of mint simple syrup, lime juice, salt, and ground pepper.
