Refreshing Summer Salad With Watermelon And Peaches

Ingredients
  

  • 1 seedless small watermelon, rind removed
  • 1 cucumber, peeled
  • 2 freestone peaches
  • Leaves from 10 spearmint sprigs, divided
  • 4 sprigs chives, minced
  • 1 small lemon, zested and juiced
  • 3 tablespoons honey
  • ¼ teaspoon kosher salt

Instructions
 

  • Cut watermelon and cucumber into 1-inch cubes, and slice each peach into 8 pieces. Set aside some mint leaves for garnish, if desired. Hand tear the remaining mint into small pieces.
  • Play all ingredients in a large mixing bowl. Drizzle honey over top and sprinkle on salt. Gently toss to combine. Serve cold. Garnish with mint leaves.
