
Fava Bean Hummus

Servings 3 cups
Ingredients
- 1 cup dried fava beans
- 1 cup tahini
- 2 tablespoons Meyer lemon juice
- 2 teaspoons kosher salt
- 1 cup fresh fava beans
- 3 tablespoons olive oil
Instructions
- Cook dried fava beans until plump and tender using InstapPot, pressure cooker, or other preferred method. Add cooked favas, tahini sauce, Meyer lemon juice, and kosher salt to food processor and run until consistently smooth texture is achieved. Blanch fresh fava beans in lightly salted boiling water for 3 minutes. Transfer favas to bowl of ice water to stop cooking. Drain cooked favas from ice water bath and dry with clean kitchen towel. Fold towel over favas and give them a gentle massage, pressing down and moving hands back and forth to release them from skins. Scoop some fava hummus into bowl and create a well in the center. Place a spoonful of blanched favas into the center of hummus and top with high quality olive oil.
